If the browned cheese around the edge of a dish is the bit you’d choose first, there’s plenty of it here. These onion crisps have a thin round of sweet onion in the middle and cheddar that spreads into golden, crisp edges around it. A little rosemary keeps them savory without needing much else.

That salty edge against the sweeter onion is what I like about these. I’d serve them with a small bowl of marinara or ranch, especially if the rest of the food on the table is soft or creamy. They do need a few minutes on the tray to firm up, but after that you can pick one up and dip it without reaching for a fork.

Ingredients for Cheesy Onion Crisps

I use sweet onions with shredded cheddar and one sprig of fresh rosemary. A little neutral oil or cooking spray is only for the parchment, while marinara or ranch is optional and stays on the side for serving.

How to Make Cheesy Onion Crisps

Prepare two parchment-lined baking sheets and lightly grease the paper before arranging the cheese portions. Keep the onion rounds thin and even so the batch finishes at a similar pace.

Prepare the trays

Heat the oven to 180°C. Line two baking sheets with parchment paper and lightly grease the paper.

Slice the onions

Peel the sweet onions and slice them very thinly, trying to keep the rounds as even as possible.

Portion the cheese

Divide the shredded cheddar into about 16 small piles on the prepared baking sheets, leaving some space between them.

Add onion and rosemary

Place one onion slice on each pile of cheese. Finely chop the rosemary and sprinkle it over the onion rounds.

Bake until crisp

Bake for about 11 to 13 minutes, until the cheese is fully melted and the edges are golden and crisp. Watch closely during the final minutes because the timing can vary with the thickness of the onion slices.

Let them firm

Leave the crisps on the baking sheets for 5 to 7 minutes. They will firm as they cool and become easier to remove.

Serve the crisps

Serve warm or at room temperature with marinara sauce, ranch dressing, or your preferred dipping sauce.

Tips that make a difference

  • Keep the onion rounds very thin and even so the crisps bake at a similar pace.
  • Leave space between the cheddar piles because the cheese spreads as it melts.
  • Watch the edges during the final minutes and remove the trays once they look golden and crisp.
