Not every chicken dinner needs you standing over a skillet. This one has thighs, broccoli, and a creamy Parmesan sauce together in a baking dish, so you can step away while it’s in the oven. I’d choose it when I want a warm dinner but don’t feel like managing several pans.
I like the broccoli with this sauce as much as the chicken. The florets hold onto it, and the salsa verde adds some tang to all that cream and cheese. The ranch flavor comes from dill and chives rather than a packet of seasoning. I’d add a piece of bread on the side for the sauce left on the plate.
Ingredients for Parmesan Ranch Chicken
I use boneless skinless chicken thighs with broccoli cut into small florets. The sauce combines room-temperature cream cheese, heavy cream, Parmesan, tomatillo-based salsa verde, onion, dried chives, dried dill, and paprika; the salted butter stays cold and is cut into small pieces.

How to Make Parmesan Ranch Chicken
Everything is assembled in the baking dish. The oven stays at 180°C throughout; only the foil and the convection setting change for the final stage.
Prepare the oven
Heat the oven to 180°C.
Arrange the chicken
Arrange the boneless skinless chicken thighs in a single layer in a large baking dish.

Add the seasonings
Add the room-temperature cream cheese, dried chives, dried dill, and paprika, then season with salt and black pepper.

Coat the chicken
Mix the cream cheese and seasonings over the chicken so the thighs are coated before building the sauce.

Mix the sauce
Add the chopped onion and tomatillo-based salsa verde. Pour in the heavy cream, sprinkle over the grated Parmesan, and mix gently so the chicken is evenly coated in the creamy mixture.

Add butter and broccoli
Scatter the cold butter pieces over the top. Arrange the small broccoli florets around and over the chicken.

Bake covered
Cover the baking dish with aluminum foil and bake for about 30 minutes.
Brown the top
Remove the foil and switch the oven to convection mode. Cook for another 10 minutes so the top browns slightly and the broccoli finishes cooking.
Check and combine
Check the thickest thigh before serving. The center should have no pink and reach at least 74°C (165°F) on an instant-read thermometer. If it is not there yet, return the uncovered dish to the oven for 5 minutes and check again. Once cooked, gently stir the sauce at the bottom to combine the melted cheese with the chicken juices.
Serve with sauce
Serve the chicken hot with the broccoli and plenty of the creamy Parmesan sauce.
Tips that make a difference
- Arrange the chicken in one layer so every thigh sits in the creamy sauce and cooks evenly.
- Cut the broccoli into small florets so it can finish cooking during the same time as the chicken.
- Keep the dish covered for the first 30 minutes, then remove the foil only for the final browning stage.
- Stir the sauce gently after checking the chicken so the melted cheese and pan juices come back together.
