8 Cookie Recipes Everyone Will Love
Eight tested cookie recipes, from quick three ingredient batches to brown butter cookies, with ingredients, quick methods, and links to each full recipe.

Sometimes I just want a peanut butter cookie without getting out half the cupboard. Other times, I'd rather spend an afternoon on browned butter and chocolate, even with the chilling time involved. Both belong here. You don't need the same kind of cookie, or the same amount of work, every time you feel like baking.
I like a little variety in the cookie tin, too. The lemon crinkles have a soft middle under that white sugar coating, while the zebra cookies give you vanilla and cocoa in the same slice. If neither sounds right, there are honey cinnamon and strawberry cookies as well. I'd pick the flavor first, then check how much time the dough needs before putting the kettle on.
3 Ingredient Peanut Butter Cookies
This is the one I make when I want a batch of cookies without turning the kitchen upside down. Three ingredients, one bowl, and the fork marks give them their familiar finish.

Brown Butter Cookies
These take a little more planning, but the brown butter gives the whole batch a toasted depth that makes the waiting worthwhile. The centers stay soft and the edges get just enough color.

Different cookies give you different clues at the end of baking. The piped butter cookies should just begin to turn golden at the edges, while the lemon crinkles keep a soft middle under their sugar coating. Follow the signs in the recipe as well as the timer.
If you're trying more than one batch, check the chilling time before deciding what to mix first. The peanut butter cookies can go ahead without a dough chill, but the brown butter and zebra doughs need their time in the refrigerator. I'd rather plan that wait than have a finished dough and nowhere to put it.
