3 Easy Desserts You Can Make Ahead

Three easy make-ahead desserts: Oreo cups, chilled mini cheesecakes, and chia pudding with chocolate, peach, or cinnamon apple finishes.

Dessert is easier to enjoy when the mixing is already done and the glasses are waiting in the refrigerator. That is especially useful when dinner needs your attention, or when you would rather not leave a sink full of bowls until the last minute. These three desserts all need time to chill, so making them ahead is part of the recipe rather than a shortcut.

I'd choose the Oreo cups when I want cookies and cream with fresh raspberries, and the cheesecake cups when I can give them the full overnight chill. The chia pudding gives me another kind of choice: chocolate banana, peach coconut, or cooled cinnamon apple over the vanilla base. Each one is served in its own glass or jar, with the layers and toppings still visible when it reaches the table.

No-Bake Oreo Dessert Cups

Crushed Oreos run through the base and the cream cheese filling, with raspberries on top. This recipe makes three cups and has the shortest chill here: at least one hour. Leave the berries and final crumbs until serving.

Mini Cheesecake Cups

The cheesecake cups need at least eight hours in the refrigerator, so they're the ones I'd plan for the night before. Add the fruit and basil just before serving. The number of cups depends on your glasses.

Chia Pudding with Three Variations

Choose chocolate banana, peach coconut, or apple cinnamon over the same vanilla chia base. Allow a 15-minute rest, then at least two hours in the refrigerator. You can make just one flavor; there's no need to prepare all three.

A little planning

Save the finishing touches.

I'd get the glasses out before mixing anything. Their size matters, especially for the cheesecake cups, where a few larger glasses will use up the filling sooner than small ones. Leave enough space at the top for the fruit.

Once the cups are assembled, give them their full time in the refrigerator. The raspberries on the Oreo cups and the fruit on the cheesecakes can wait until serving. For the apple chia pudding, let the cooked apple cool completely before adding it to the chilled base.
